These almond bites are plant-based, gluten-free, and wonderfully easy to make. Made with creamy almond butter, mixed in with almond flour and vegan chocolate chips and coasted with dark chocolate and coconut, they are delicious snacks that can be enjoyed any time of the day, and especially good if you are craving for a healthy sweet treat.
Preparation + freeze time: 2-3 hours
Ingredients (makes 8)
- 1½ cup almond flour
- ½ cup vegan chocolate chips
- 4 tbsp almond butter
- Pinch sea salt
- Chocolate sauce
- 3-4 squares 80%+ dark chocolate (dairy-free)
- 2 tbsp coconut oil
- Desiccated coconut to coat
Method
- Combine all the filling ingredients together in a bowl until well combined
- In a small pot melt the chocolate squares with the coconut oil, stir constantly. Once melted take off the heat and leave to one side for a minute or two.
- Line a tray with parchment paper, leave to one side
- Scoop teaspoon worth of the filling (I find making them slightly smaller easier to manage), roll into a ball, coat with the chocolate sauce and cover with dedicated coconut (I did half with, half without). Repeat
- Layout on the lined tray and freeze for a couple of hours. Best kept stored in the freezer
