This bowl of oats is a quick, easy, and nourishing way to kick start the day. It’s nutritious, full of fiber, rich in antioxidants, and goes very well with a generous serving of pecan or almond butter.
Preparation + cooking time: 20 minutes
Ingredients (serves 2)
- 1 cup rolled oats
- 1 cup water
- ¾ - 1 cup coconut milk for drinking (or any plant-based milk of your choice)
- Handful blueberries
- A large scoop of pecan or almond butter
Method
- In a pot combine the oats, water, and 1/2 cup of milk. Bring to a boil, stir in the rest of the milk and leave to simmer on a low heat for 10-20 minutes depending on the consistency you want
- Add more milk if you want it to be more on the liquid side
- Once cooked, served with a scoop of nut butter topped with berries
